Pumpkin Shrimp Bharta

If you ask me what is the least likeable veggie in my family, I would say, it’s pumpkin. No one prefers it apart from me and my MIL. I have a fascination with procuring farm-fresh pumpkins. Its dark orange inside holds me in temptation. The more orange, the tastier it is. But what about others? For them I have come up with this kaddu ki sabji; the pumpkin shrimp bharta.

Let’s see how you too may prepare this kaddu ki sabji in your kitchen.

Ingredients:

Pumpkin – 200 g

Shrimps – 100 g

Onion – 1 No. (chopped)

Garlic cloves – 3 Nos.

Red chili – 3 Nos.

Coriander leaves – 1 teaspoon (finely chopped)

Turmeric powder – ¼ Teaspoon

Salt – To taste

Oil – 2 Tablespoons

 

Procedure:

Take some drops of oil and smear it on the pumpkin piece.

Now roast it in the open flame or use an oven / air fryer to roast it completely.

Marinate the shrimp with a pinch of salt and turmeric.

Take a pan.

Heat oil.

Fry the red chili.

Transfer it to a plate.

In the same oil, fry the garlic cloves.

Transfer it to the plate separately.

In the same oil, fry the onions until soft and slightly brownish.

Transfer them to the plate separately.

Now in the same oil, fry the shrimp.

Transfer them to a separate plate.

Chop them roughly.

Now mash the roasted pumpkin in a bowl.

On a separate plate, crush the fried red chili in the salt.

Combine them with the mashed pumpkin.

Crush the garlic and combine them with it too.

Now add the onion, coriander leaves, and chopped shrimp.

Add salt to taste.

Combine them all together.

Team it up with steamed rice and serve.
