Egg Fried Rice (Chinese Style)

Some days are quite dull, some days are meant to be spent without spice. I spent the day in such a manner today. But my taste buds never accept dull food. So it’s best if I could spice it up a bit with a sprinkle of Chinese condiments. So, here I go. A bowl full of egg fried rice along with chili fish. That’s all for today’s dinner. The quickest rice recipe ever, which you may prepare in almost no time, is egg fried rice. And the best part is that it has no extra spices, which may upset your digestive system, as you are supposed to eat light at night.

Let’s see how you too may prepare this in your kitchen.

Ingredients:

Boiled rice – 1 bowl

Spring onion – 3 Nos. (separately chopped both the white bulb portion and the green leaf portion)

Garlic cloves – 4 Nos. (finely chopped)

Carrot – 1 No. (Medium in size, cut into small pieces)

French beans – 10 Nos. (diamond cut)

Capsicum – 1 No. (cut into small pieces)

Eggs – 3 Nos.

Oil – 3 Tablespoons

Salt – To taste

Pepper powder – To taste

Soy sauce – 2 Tablespoons

 

Procedure:

Take a wok.

Heat 1 tablespoon of oil.

Break the eggs into it.

Sprinkle some salt and pepper.

Gently scramble them.

Keep it aside.

Heat 2 tablespoons of oil in the same wok.

Add the chopped white bulb of green onions.

Sauté for some seconds.

Add the chopped garlic.

Sauté them too.

Now add all the veggies.

Sprinkle some salt and sauté them on a high flame.

Then add the boiled rice.

Mix them well.

Now add the salt, pepper, and soy sauce, and give it a quick mix.

Be sure about the salt, as soy sauce has some salt in itself too.

Now add the scrambled egg along with chopped green leaves of green onion.

Mix them well.

Team it up with chili fish or chili chicken and serve hot.
