Have you ever tasted the green garlic salt? It’s an excellent match for every regular food, fruits, chaats, Raita, or anything that needs an extra sprinkle of salt. It is a condiment made in Uttarakhand and some parts of Himachal Pradesh. Himalaya is surprisingly wonderful, and so is its taste. The lifestyle is simple, and so is their cooking method. I have fallen in love with their cuisine. Green garlic salt is certainly one of its kind. Early summer is the time when the fresh batch of green garlic hits the vegetable market. I never fail to pick it up as it is one of my favorite ingredients. Recently, I came across the recipe on the internet. What next? I had to try it by myself.

Ingredients:
Green garlic – 1 Cup (both the garlic and the green stem together)
Coriander leaves – ½ Cup
Ginger – 2 inch
Green chilies – 4 Nos.
Cumin seeds – 2 Teaspoons
Table salt – 2 Teaspoons
Rock salt – ½ Cup
Procedure:
Clean the green garlic. Separate the garlic from the stem.
Now chop the stems.
Chop the coriander leaves too.
Take a grinding jar.
Add the green garlic (both the garlic and the stem), and the coriander leaves.
Add ginger and green chilies.
Add cumin seeds, followed by table salt.
Now give it a good grind without water.
Add the rock salt and give it a good mix.
Now spread the paste over a foil.
Bake it at 100°C for 1 hour in an oven or air fryer.
Cool it down.
Grind it in a mortar.
Your green garlic salt is ready.
