Mango Coulis

Summer is the time for some topical fruits. And mango tops them all. Have you ever heard of fruit sauce? Well, mango coulis is a sort of that; a fruit sauce. Its deep dark golden colour and fresh aroma are so tempting. I use it as a base ingredient for various other desserts. But never miss a chance to scoop out a spoonful of this pure delicacy before using it to make a dish. This one spoonful of mango coulis is my special treat to myself which I don’t share with anyone. I recently made a batch of cupcakes using this as a topping. As its name suggests, it is originated in France; but immensely accepted by modern-day culinary practice globally. Surely it got a wide opening in my cozy kitchen too. It has very lesser ingredients and an impeccable simple cooking procedure.

Let’s see how you too can prepare this before summer takes a break for a year.

 

Ingredients:

Mango – 1 kg (chopped)

Sugar – 200 g

Lemon juice – 2 Tablespoon

 

Procedure:
Cooking:

Take a large pan that is sufficient to accommodate 1 kg of ripened mango cubes. Put all the mango in it.

Add sugar.

Then add lemon juice.

Combine them well.

Now cook it on medium flame.

Turn it to boil. Stir occasionally.

As the sugar melts and the mangoes are semi-cooked in that syrupy base lower the flame.

Lid it and cook it for 10 minutes.

Turn off the flame once done. Bring it to room temperature.

 

Blending:

Take a blender and blend it into a smooth purée.

Add water to maintain its consistency.

Don’t make it too watery. It tastes better as it stays in a sauce-like consistency.

 

Storing:

You may store it in an air-tight container for seven days.

You may freeze it into cubes and store it for six months in the freezer.
