Prawn Fried Rice

Prawns have the magic touch. Really. I have seen it creating wonders. It is considered the star ingredient of Goan cuisine. But every other part of India loves its presence on its plates. And so I am. It is hard to believe that it came into Indian cuisine quite a long time ago. But with the Portuguese influence, it got its wings in the late 15th or early 16th century. People tend to believe that the prawns have entered the Indian Kitchen holding Portuguese hands. But it’s not true. The prawns were vividly present in coastal cuisine.  If you ask me to combine prawns and rice, I would non-hesitantly say prawn fried rice is my kinda favorite.

Let’s see how you too can make it.

 

Ingredients:

Rice – 4 Cups (boiled)

Prawns – 250 g (medium size, de-veined and clean)

Onion – 2 Nos. (chopped)

Garlic – 6 Nos. (Chopped)

Carrot – ¼ Cup (chopped)

Beans – ¼ Cup (chopped)

Capsicum – ¼ Cup (chopped)

Eggs – 2 Nos.

Oil – 4 Teaspoons

Salt – To taste

Sugar – 1 Teaspoon

Black pepper powder – 1 ½  Teaspoon

Garam masala powder – 1 Teaspoon

 

Procedure:

Prepare the egg:

Take a wok. Heat 1 teaspoon of oil.

Break 2 eggs in it.

Scramble it.

Transfer it to a plate and keep it aside.

 

Prepare the prawns:

Heat 1 teaspoon of oil in the same wok.

Add the prawns. Sprinkle the turmeric powder and salt.

Fry them until they turn red.

Transfer them to a separate plate.

 

Prepare the veggies:

Heat 2 teaspoons of oil in the same wok. Put the flame high.

Add chopped garlic.

Fry for 10 seconds.

Add the chopped onions.

Fry until they become transparent.

Add the carrot, beans, and capsicum.

Add salt to taste.

Fry until the veggies become fried.

 

Combine:

Now add boiled rice, scrambled eggs, and fried prawns to the veggies.

Add black pepper powder, sugar, and garam masala powder.

Combine well.

Keep it closed. Let the aroma settle inside the rice.

Serve hot with your kinda side dish. A chili chicken may be.

Conclusion:

Prawn Fried Rice is a tempting dish for every food lover. But if you are trying prawns for the first time, be sure you don’t encounter an allergy attack. Despite its heavenly taste, it is quite infamous for its allergic properties. So be sure before you grab it.
