Red Cabbage & Pineapple Salad

How small things can brighten up your regular food platter is unbelievable. I had this red cabbage in the vegetable box, and I could only imagine of making a salad with red cabbage. But how do you bring taste to this amazingly looking veggie? The best part of this veggie is it has no personal tasteful identity. So, you get a big canvas to work on. I thought of adding a nutty flavor of peanuts and a tangy pineapple taste. And voila! It worked. Everyone liked it. My SIL asked for the recipe. And I said you will get it on the globalquisine.com.

Let’s see how you too can prepare a salad with red cabbage in your kitchen.

 

Ingredients:

For Salad:

Red Cabbage – 1 Cup (shredded)

Pineapple – ½ cup (small cubed)

Peanut – ¼ Cup (Roasted)

Lettuce – ½ Cup (torn by hands)

 

For Dressing:

Olive oil – 1 Tablespoon

Dark soya sauce – 1 Tablespoon

Lemon juice – ½ Tablespoon

Sugar – 1 Teaspoon

Green chili – 2 Nos.

Salt – To taste

 

Procedure:

Prepare the salad:

Take a large bowl.

Put shredded red cabbage first. Toss it with your fingers so that its strands appear isolated.

Now add the lettuce, peanut, and the pineapple cubes.

Mix them all.

 

Prepare the dressing:

Take a blender.

Add olive oil, sugar, soya sauce, green chilies, and lemon juice.

Blend it well. A nice brown liquid will form.

Check the salt as soya sauce has its own salt. If required, you may add some more salt and give it another round of blend.

Assembling:

Now pour the dressing over your salad.

Mix it well.

You may keep it in the refrigerator and serve it after some time.

 

Conclusion:

A salad with red cabbage has no boundaries. You may set your own. You may use pomelo instead of pineapple. You may use roasted sesame seeds instead of peanuts. You may add pomegranate too. You may add some other ingredients which you think may gel well. It’s your kitchen, it’s your canvas, make your masterpiece.
