It’s weekend. The early mornings are quite lazy on weekends. I get enough time to prepare a savory breakfast. So, thought of revisiting my simple pancake recipe, which I hadn’t prepared for quite a long time. You will be surprised to know in ancient Greece, roughly around 500 BCE, people used to make pancakes with wheat, sour milk, and honey. That’s so fascinating! Isn’t it? It has been dominating the morning kitchen for over 2500 years. So many stories must be there in its closet. It is so much popular now, that multiple ready-to-cook brands have launched its ready-mix version. But nothing can match its freshly made fragrance and the juicy lip-smacking taste of maple syrup that gets served with it. Yup, that’s what I normally pour over every pancake. Today was no different. Actually, I am a bit biased for maple syrup, and I had a fresh batch of the same. This matches perfectly with the fluffy, tasty, and super enjoyable simple pancake recipe.
Let’s see how you too can prepare fluffy pancakes for weekend breakfast.
Ingredients:
Refined flour – 1¼ Cup
Milk – 1 Cup
Butter – 5 Tablespoon
Butter – For shallow frying
Salt – A pinch
Sugar – 1 Tablespoon
Baking powder – 2 Teaspoon
Egg – 2 Nos.
Maple syrup/honey – For serving
Procedure:
Prepare the milk:
Heat milk in a pot.
Add the butter and bring it to melt. Don’t boil the milk as we don’t want our eggs to scramble.
Prepare the dry mix:
Take a bowl. Sieve the flour through a fine strainer. Add salt, sugar, and baking powder.
Combine them well.
Prepare the batter:
Now dig a shallow well in the middle of the dry mix.
Break the eggs into that well.
Start whisking.
Now add the warm milk-butter mix to the dry mix and combine it well. Don’t add entire milk in one go, rather add it little by little.
Stop whisking as soon as it gets a smooth consistency.
Keep it aside for 5 minutes. You need to give time to activate baking powder. It gets activated as soon as it comes in contact with an acidic liquid. Here the milk works as an activator.
Prepare the pancakes:
Heat a non-stick pan. I used a cast iron skillet as I prefer cast iron utensils over any non-stick one. And, a cast iron skillet works perfectly for my simple pancake recipe.
Now grease the pan with some butter.
Pour some batter on it with the help of a ladle.
Spread a little bit by twisting the pan. Don’t let it get thin. It should have a body.
Now let it become golden brown from one side.
Air bubble will appear on the surface and you will be able to flip it by that time.
Now flip it. And let the other side turn golden brown too.
Prepare other pancakes too.
Spread some butter on these.
Serve hot with maple syrup or honey.
