Today I am going to talk about one of the coolest summer drinks, namely Kacha Tok (কাঁচা টক), which means uncooked sour drink. Being married to a Sylhetti family I am open to these sorts of earthen culinary practices, in the yore, women of the Sylhetti households used to spend their entire time in the kitchen. This was the drink that used to energize them from getting tired. Amazingly tasted, soon this drink turned into a welcome drink during the festivities.
Let’s see how you too may prepare this in your kitchen.
Ingredients:
Powdered sugar – 1¼ Cup
Rock salt – To taste
Table salt – 2 Teaspoons
Lemon – 2 Nos.
Poppy seeds – 3 Tablespoons (dry roasted)
Coconut paste – 1 Cup
Tamarind pulp – 1½ Cup
Lemon leaves – 10 Nos.
Water – 2 Liters
Procedure:
Make a fine paste of the dry roasted poppy seeds.
Now take a big jar or a pot where you want to store your coolest summer drinks, Kacha Tok.
Pour water into it.
Add powdered sugar.
Mix it well.
Let the sugar dissolve completely.
Add the roasted poppy seed paste and coconut paste.
Stir well.
Add the tamarind pulp followed by lemon juice.
Mix them.
Add rock salt and table salt.
Adjust the salts in the drink.
Now tear the lemon leaves and add them into the drink.
Store it in the fridge.
Serve chilled.
