Kesar Thandai

I know, I know, it’s neither Holi nor Shivaratri, still, I am having my Kesar Thandai today. Actually, I am quite fond of this drink but don’t prepare it quite often. But today is different. I thought of preparing a thandai recipe as a welcome drink for some of my guests. The origin of this drink dates back to the mythological era. It is believed that it’s the favorite drink of Lord Shiva. Thought of mesmerizing my people with its divine taste.

Let’s see how you too can prepare this in your kitchen.

Ingredients:

For the masala:

Cashew nut – ¼ Cup

Pistachio – ¼ Cup

Fennel seeds – 3 Tablespoons

Cardamom – 10 Nos.

Black peppercorn – 1 Teaspoon

Melon seeds – 2 Tablespoon

Poppy seeds – 2 Tablespoons

Fresh rose petals –  4 to 5 Nos.

Almonds –  ¼ Cup

 

For the milk:

Milk – 1 Liter

Sugar – 7 Teaspoons

Saffron – A pinch

 

Procedure:

Prepare the thandai masala:

Take a bowl.

Add cashew nut, pistachio, fennel seeds, cardamom, black peppercorn, melon seeds, poppy seeds, and fresh rose petals.

Soak this in one glass of water.

Keep it aside for 4 to 5 hours.

Take almonds in a different bowl.

Soak these in the water.

Keep it aside for 4 to 5 hours.

And then peel off the skin of the almonds.

Take a blender.

Add the cashew mix and the peeled almonds to it.

Give it a good blend.

Keep the mix aside.

 

Prepare the milk:

Take the milk in a large pot.

Bring it to a boil on medium flame. Stir continuously during the process.

Add saffron after one boil.

Mix it well.

Boil and scrape the sides. Keep stirring.

Boil until this reaches its ¾ volume. This will take a good 15 minutes.

Add sugar.

Boil and stir for another 5 minutes.

Transfer it to a different bowl and cool it down completely.

Now refrigerate the milk for an hour.

 

Assemble:

Take a blender.

Add the paste and the milk.

Give it a nice churn.

 

Serving:

Take medium-sized glasses.

Pour the drink.

Garnish with saffron.

Serve cold.
