Pahari Dal is an authentic recipe from the land of Himalaya. I recently got a hand over this urad dal recipe from the internet. Believe me, I haven’t tasted dal this way before. It’s aromatic, full of tastes, and most importantly, the procedure of making the dal makes it so unique that you can bet you will continue to prepare this every now and then. Well, I loved it, I just loved it. The most unique part is, that you need to serve it with a dollop of Ghee or butter, and that enhances the taste tenfold.
Let’s see how you can prepare this in your kitchen.
Ingredients:
Black gram (broken into halves) – 1 Cup
Garlic – 5/6 Cloves
Green chili – 4 Nos.
Ginger – 1 Inch
Coriander seeds – 2 Teaspoons
Dry red chili – 2 Nos.
Mustard seeds – ½ Teaspoon
Cumin seeds – ½ Teaspoon
Hing/ asafetida – ½ Teaspoon
Mustard oil – 2 Tablespoons
Salt – To taste
Ghee/ Butter – for serving
Procedure:
Clean the dal very well to make the urad dal recipe.
Now spread it on a plate and let it dry completely.
Roast the dal on high flame until it turns aromatic but NOT upto golden brown. We don’t want that.
Spread it again on a plate and cool it down.
Use grinder to coarsely grind the roasted dal.
Make a dry paste of garlic, green chili, ginger and coriander seeds. Do not use water while grinding.
Now heat oil in a wok.
Add dry chili along with mustard and cumin seeds as tempering.
When the aroma of the flavors comes out add the dry paste. Let it sputter for a while. In this stage add salt.
Add Hing/asafetida once the paste is cooked enough.
Give it a quick mix.
Now add the dal.
Mix it well and fry it for 2 minutes.
Add hot water.
Mix it well.
Cover it with a lid and put it on simmer.
Let the dal boil.
Add more hot water whenever needed.
Adjust the salt accordingly.
Serve hot with a dollop of ghee or butter. Team it up with steamed rice.

See, India has a plethora of tastes and its own way of enjoying it. This urad dal recipe is an authentic Pahari recipe which might or might not be liked by everyone. Those who love to add more taste to it can chop a tomato or an onion or both and add them while adding water to the dal. But for me, I appreciate the way it is without adding a single extra ingredient. It is now my favorite urad Dal recipe for sure.
